Hops are an old and very important ingredient in beer, adding both aroma, flavor and longevity thanks to it antiseptic action. Monks probably brought hops with them as a herb or medicine when they established abbeys in northern Europe in the 8th and 9th centuries, but it wasn't until the 13th or 14th century that hop become a common flavoring in beer in the German lands - instead of the common gruit. Today, almost all beers are flavored with hops.
