      That is true- we do not have anything scheduled for Friday.

      How does the Cook's Country version compare to the version on the back of the Ro-Tel can?

      The fritos are definitely a departure from the recipe I grew up with, as is the lack of condensed soups - you make a very light roux with your onions, here, and then add the ro-tel and heavy cream and jack cheese, and then you cook the chicken in the creamy cheesy ro-tel mixture.

      My mother thought that she used the recipe from the back of the can of ro-tel, but I don't think that can be right, since she SWEARS that in the recipe she used, you soaked the corn tortillas in chicken stock. I think the recipe my mom used is "Ranch Chicken" (copyright fears? retaliation from the King family, which has disavowed the casserole) from the Old Dallas Cookbook (published by the women of the Dallas Southern Memorial Association), as that's the only recipe I can find in my collection of my mother's cookbooks (that I'm babysitting for he next few months) that calls for you to soak the tortillas.

      I could go for a lack of condensed soup.

      Speaking of ranches, I have the Southfork Ranch cookbook- I will have to check and see if *they* have a chicken.
