more fodder from my fuckyeahveganpizza win.

a gluten free vegan Victoria Sponge we made from this recipe.

we had to double up the mixture to get the two layers, and add some soya milk as the mixture was like putty. still it came out quite dry (like shortbread, as someone put it).

if I did it again I'd use a quarter cup of milk instead of just a splash. that might give it a bit more moisture.

an old favourite of mine. still tastes more almondy than lemony, but with the raspberry sauce (which was just blended raspberries with maple syrup added to take away the tartness) who cares, it's still delicious.

no cake for me this year, partly coz I'm off chocolate, partly coz I couldn't be bothered, but mostly coz I wanted something creamy, so say hello to my birthday pie. (made yesterday, photographed today)

it's apple and pear, made with a pastry I bought in Sainsburys. the cream is the SoyaToo squirty one which I'm not a big fan of, but they didn't have the one in the carton unfortunately.

ah well, you take what you can get. and it's not the end of the world. still nice an' creamy.

been on a bit of a healthy kick recently - no processed foods, no big fry ups (not that it's made any difference to my waistline) - but since it's my birthday (38, eek!!) I thought I'd treat myself.

so that's Heinz beans, Clipper organic English Breakfast tea, and scrambled tofu from the How It All Vegan recipe (the rest is fairly self explanatory).

Now that's what I call breakfast! :)
