• i was surprised that we actually had to touch the sugar with the iron -- i'm used to doing creme brulee with a torch. this was more fun, but also messier.

crema catalana

some friends invited us to an "iberian themed" dinner, so i decided to make some crema catalana -- it's sort of a lighter, more festive version of crème brûlée with lemon and cinnamon. another friend who lives in barcelona gave me the set of ramekins and the iron earlier this year, and i'd been meaning to try them out.
