poke cake

my friend Katie's mom's recipe, i wanted to think of it was "polk" cake because it sounds cuter.

Wow! Jell-o Cake w/ 4 different flavors. We only got 2 flavors/layers when I was a kid. If only I could make it Vegan.

Mmm, love poke cake! Is the icing on this one just whipped topping or is it something else?

I’m so sorry for not posting a recipe yesterday for the cake, Katie actually took it home with her. If you do a google search for poke cake recipes—you’ll get the basic recipe, which is super easy (white cake mix, jello, etc.) We made homemade whipped cream for the frosting just because I think its fun to watch it turn into cream + it tastes so good.
Hain brand makes a Jello product with non-animal gelling substance (no meat, bone, skin, hoof, or any other part/derivative)
    Or
www.fatfree.com/recipes/desserts/vegetarian-j ello You can use this recipe to make a batch of vegan jello and then just add half the amount of fruit juice they call for to make it firmer/thicker.

Thanks for the vegan jello recipe!
I'll have to look for Hain SuperFruits next time I'm at Whole Foods.
