A cold Vegan Salad with a Warm Duck Egg pudding ?
Sometimes when I create a recipe I go to opposite extremes for more contrast and interest.
As I am eating locally grown foods from South East Asia Thailand I think of you if you live in the West with an (or option to make this recipe work for you)
In this recipe we will be making a Salad, a sweet and sour vinaigrette dressing,a smoothie,and a pudding all to complete this artful food presentation all done in under 15 minutes.
Ingredients for the Broccoli Vegan Salad :
One whole fresh coconut or you can use avocado which has the same creamy consistency in the meat.
Half a cup of your favorite leafy greens of your choice.
¼ of freshly grated carrot
One half inch thick fresh pineapple slab de skinned or you can use pears or apple with the skins on if the fruit is organic and it should be as much as possible.
One half loose cup of broccoli flowers
One Avocado
One teaspoon of soaked Gogi berry or cranberry fresh or dry fruits soaked
half a frozen lemon to make zest
Ingredients for a simple sweet and sour vinaigrette dressing for tossing:
One teaspoon of freshly squeezed lemon juice
One teaspoon of cold pressed apple cider vinegar (A probiotic and tonic to help your hydrochloric Acid production)
¼ teaspoon of ginger powder ( helps with digestion)
One half teaspoon or more for taste using from Asia the coconut flower syrup or from the West unfiltered raw honey.
Ingredients for the warm Duck Egg Pudding:
A sauce pan of one cup of water
One free range organic hen or duck egg.
One table spoon of oatmeal
One table spoon of milled white sesame seed powder Tahini is OK as well.
One medium size carrot
A few of your selected unsalted nuts of your choice.
A teaspoon of fresh or dry rosemary herb
Some bee pollen on stand by
Instructions for making the Broccoli Vegan Salad :
In a blender add one or the other one whole fresh coconut meat or you can use half an avocado which has the same creamy consistency as the coconut meat.
Split the half cup of leafy green into 2 parts and add one part to the blender
Split one half inch thick fresh pineapple slab in 2 parts de skinned or you can split half a cup of pears or apple with the skins on if the fruit is organic and it should be as much as possible.
Add this to the blender
If you are using the coconut then just add the coconut water half way up.With your choice of pear or apple you can use pure water.
Hint for good taste and texture of the food presentation. Often I do this with my foods. I will split the same food choices in half and add one part to the blender and one part to the salad. It works for me.
Blend this smoothie into a nice consistency then spoon the cream to make a circle not to close to the edge of the plate. The rest of the smoothy is your salad dressing to be used on other recipes just store it in a glass jar and refrigerate it . I do this often to not waste and to keep things moving along.
Next add all the remaining salad to your mixing bowl.
Instructions for making your sweet and sour salad vinaigrette for tossing:
In a small bowl add the following
One teaspoon of freshly squeezed lemon juice
One teaspoon of cold pressed apple cider vinegar (A probiotic and tonic to help your hydrochloric Acid production)
¼ teaspoon of ginger powder ( helps with digestion)
One half teaspoon or more for taste using from Asia the coconut flower syrup or from the West unfiltered raw honey.
Mix well together and add just a little bit to your salad bowl and toss using fork and spoon
Than add ¼ a cup of freshly grated carrot and toss some more.
Then layer the tossed salad over the serving dish of green smoothie into a mound.
Then garnish the salad all around with the following
One half 1/4 cup of broccoli flowers showing the tops up placed randomly
Thin slices of half of an Avocado circled around the mound of salad
One teaspoon of soaked Gogi berry or cranberry fresh or dry fruits soaked and randomly placed on top
half a frozen lemon to make zest sprinkled on top and your cold vegan salad is done.
Instructions for making the warm Duck Egg Pudding:
A sauce pan of one cup of water to a boil.
One free range organic hen or duck egg dropped in.
One table spoon of oatmeal stirred in.
Turn down the heat and let simmer for one minute
Take one medium size carrot and shred this root vegetable and add to the sauce pan for blanching.
Then turn off the heat as the shredded carrot blanches stirring occasionally.
Then add one table spoon of milled white sesame seed powder or Tahini is OK as well.
A few of your selected unsalted nuts of your choice can be added.
After mixed well then pour into your serving dish and save any of the rest in a glass jar for your next gourmet recipe creation in your refrigerator.
Then a teaspoon of fresh or dry rosemary herb can be sprinkled over top.
Some bee pollen on stand by can be sprinkled over this.
Then remember your left over sweet and sour salad vinaigrette?
Pour what is left over top and then at your option like I did in the photo sprinkle some red hot chili pepper over top. Thats it your done and you now have 2 very contrasting dishes at one serving.

Asian Health Recipe Chef Barry
This recipe takes only 10 minutes to make for one and is an Asian fusion of Chinese ,Macrobiotic Japan, Korean, and Thai made for strength and immunity. A stewed herb gravy broth with raw vegan ingredients plus probiotics .Methods of stewed ,blanched,fermented ,and raw. Taste is very aromatic.
I also give replacement options in creating this recipe for you. Vegan with a lot of Raw.

The cooked Ingredients for the main dish:
A small hand full of fresh Shiitaki Mushroom caps dry is OK as well. (Macrobiotic Japan)
One field whole red onion
An 8 inch stalk of fresh celery. ( note that celery is at the top of the dirty list for pesticides) If it is not organic then omit it. No exceptions here . In its place you can use a stalk of fennel .
One small whole shallot
2 crushed garlic cloves
2 sticks of small carrot
One small sweet potato cut into wedge sticks
One small beet cut into wedge sticks
The raw ingredients for the main dish:
Half a cup of your favorite loose aromatic leafy greens such as basil, chicory, thyme, olive leaf,cilantro,water cress, mint,red oak leaf, spinach leaf ,or even the leaves of Brussels sprouts for example.
One table spoon of dry wakami seaweed soaked in water. (Macrobiotic Japan & Chinese)
One Table spoon of Tamarind paste( A South East Asian aromatic fruit that grows from large trees of long bean like brown pods. This food will chelate the toxin aluminum fluoride out of the human body.)
(Thai )
One Table spoon of fermented soy Miso paste (Macrobiotic Japan)
¼ section of a sweet red bell pepper.
A few raw soybean sprouts for garnishing
¼ lemon wedge
half a frozen lemon for zest .
Raw Ingredients for the Asian gravy stew:
One table spoon of presoaked Goji Berries called Wolf Berries in Thailand (Thai Chinese)
If not available I recommend fresh whole cranberries
One level table spoon of traditional Korean style Kim-Chi (Cultured fermented cabbage) Can buy in any Asian or Health food store. (Korean) (A Probiotic)
One teaspoon each of presoaked in water chia seed and flax seeds.
Nutritional Note :When these seeds are stored in filtered water in a class mason jar in your refrigerator the natural oils will be extracted into the water and this food is highly digestible unlike the dry seed that passes right through you undigested if your stomach does not produce enough HCI Hydrochloric Acid. This keeps for weeks and I have some at the ready all the time.
A few raw Macadamia Nuts (or any nut of your choice such as pine nuts , almonds, filbert, or walnut. )
One level teaspoon of coconut flower vinegar or raw cold pressed apple cider vinegar. (A Probiotic)
On the side some freshly milled black or white sesame powder or you can blend the two half and half.
Note that every good blender should have a milling cup for this purpose. Used for thickening the sauce.
A few pieces of fresh parsley for garnish.
On the side some bee pollen ( Natures original Multivitamin and Mineral supplement)
Instructions for the main dish:
Place a small hand full of fresh Shiitaki Mushroom caps dry is OK as well. (Macrobiotic Japan)
and one field whole red onion with organic celery or fennel into your stainless steel or glassware sauce pan filled with half a cup of pure water and bring to a boil. Once the boil is obtained then reduce heat down to a simmer. Tip if you like your onion more cooked then before hand you can cut and H patten down almost to the bottom and the inside will be more cooked.
Then add the following
One small whole shallot
2 crushed garlic cloves
2 sticks of small carrot
One small sweet potato cut into wedge sticks
One small beet cut into wedge sticks
Simmer for one minute to breakdown the plants hard undigestible cellulose then turn off the flame for continued blanching of the root vegetables.
Then add one table spoon of fermented soy Miso paste (Macrobiotic Japan) into the sauce pan mixing well into the vegetable broth. Let Blanch.
Now take out your serving dish and with half a cup of your favorite loose aromatic leafy greens spread half of this across your plate.
Then layer presoaked one table spoon of dry wakami seaweed soaked in water. (Macrobiotic Japan & Chinese) across your green leafy herbs.
Then lift out of your sauce pan your semi cooked red onion and place it in the middle of your serving dish. All the remaining blanched vegetables will be carefully arranged around your red onion wagon train fashion.
Then layer the last half of your selected fresh herbal leafy greens.
Cut your ¼ sweet red bell pepper into thin strips and angle then on the side towards the onion.
Layer some of your raw soy bean sprouts over and and around.
Take
To give that Onion a nice shiny fresh look dribble some raw cold pressed coconut oil or olive oil over top.
Add your lemon wedge and your done with the main Asian Health Recipe.
Instructions for the Asian gravy stew:
The sauce for making your gravy is in your sauce pan.
Pour this into your mixing bowl and add the following thickener to make your gravy.
Add one teaspoon of each chia seed and flax seeds presoaked in water.
Stir and mix in some fresh milled sesame powder and stir continuously until you have made your gravy consistency.
Next pour this thicker mixture into your serving bowl.
Now submerge a few pieces one level table spoon of Traditional Korean style probiotic Kimchi into your gravy.
Nest layer one table spoon of presoaked Goji Berries called Wolf Berries in Thailand (Thai Chinese)
If not available I recommend fresh whole cranberries for this food recipe presentation.
A few pieces of fresh parsley for garnish is added.
On the side sprinkle some bee pollen over the surface( Natures original Multivitamin and Mineral supplement)
A few of your selected nuts for garnishing. The photo shows macadamia.
Optional but some times I do this to add a thin layer of taste excitement over the recipe. In a separate mixing bowl experiment with the following.
Curry powder (Thai) raw coconut flower sweet powder or coconut syrup or optional raw unfiltered honey. Raw lemon or lime juice. Tamarind juice. This list of ingredients will add the sweet and sourness that you are looking for in the final blend if necessary. Adding a bit of cinnamon powder is an option.
When you are happy with the taste then thinly spread the sweet and sourness or the recipe. It works believe me.

Is Soy a Health Food or Not for You ?

Since I used 2 soy products in this recipe such as soybean sprouts and miso paste I would like to talk a little bit about Soy in our diet. I live in Asia Thailand for 20 years Korea 6 years , Philippines 1 year Taiwan I year , and Mainland China 3 years. I can say that Asians do not eat as much soybean products as in the West . Asians eat it more sparingly and to them many of them eat the more fermented variety to make their Asian dishes. Yes they may consume tofu and edamame bean but not at the extent that the West is consuming.
The Edamame bean is a preparation of immature soybeans in the pod, found in the cuisine of Japan, China and Hawaii. The pods are boiled or steamed and served with salt.
Outside East Asia, the dish is most often found in Japan. it is almost like a sprout or immature legume . There is a lot of controversy with consuming unfermented soy if ant kind today in a lot of studies. First is the fact that all legumes including soy carries undigestible enzyme inhibiters and cellulose that is not very digestible in the human intestine.
In fact it is well known among Vets that large dogs that consume soy can experience a very painful death when their intestines are blocked and twisted from the undigested soybean.Most dog food brands have discontinued the use of soy as an ingredient. Remember that a dogs intestinal tract is 6 feet long and a humans intestinal tract is 36 feet long for handling soy.
To make matters worse the US Biotech industries further tested the affects of Soy and later placed a patent on this food as a GMO (Genetically Modified Organisms) that is used primarily as livestock feed for the meat industry that we consume in large amounts in the West. Many countries boycott US meats for this reason. Untested with out any longterm studies on the general population it really is tantamount to some grand experiment in health with unknown longterm consequences. All I can say the according to studies the live stock is not fairing very well with documented premature mortality ,plus the simple
fact that soy is the most unnatural and most undigestible protein to the cow. A cows natural food is organic grass for the cow to enjoy freely in open free range fields. But this is not profitable to the Government thats your tax money subsidizing your livestock and meat industry.
Consumers want their meat cheap so as long as the buying of this kind of product continues then the supply will continue on. For your health do not buy any conventional meats fed with soy, corn, and grains. This food is not natural and healthy for this animal.
Instead you should pay a little bit more money for protecting your health to support your local organic livestock farmer that worked hard to give you clean safe and superior nutrient dense meats that are high in the essential fatty acids . (Essential means our body cannot make it and we need it from out side sources in our food intake)
Conventional meats do not have the essential fatty acids of organic free range beef or any kind of meats. More people are becoming aware of this fact that all conventional meats are loaded with antibiotic drugs stored in the fatty tissues to the animals flesh. The pharmaceutical industry supplies the balk of their drugs to our lives stock more than to people. The growth hormones ,steroids, GMO, and other synthetic fillers are all found in conventional meats with out any labeling what so ever to the consumer. GMO soy is found in all human processed foods unlabeled as well to effectively which is effectively shoving this product down the throats of unwary consumers with our their consent. It is unethical and criminal for all parties to be doing this.
If you really want to eat for Health and Wellness then I suggest consuming in moderation and treating the grass fed organic free range meats of your choice as condiments only. As you are buying less of the more natural expensive foods you are protecting your health and money from the after effects of chronic disease care in our present day sick care industry.
Most Science today does not recommend the consumption of this legume unless it is sprouted and does not recommend tofu or any soy unless it is fermented like Miso Paste , Tempe ,or any germination of this legume. Almost all soy from the USA is a GMO Genetically Modified Organism product that is never labeled but is in so much of our processed foods , including conventional meats. “Yes it is true that your breakfast is the most important meal of the day and false it should be the biggest meal of your day . And the reasons for this will be explained to you by Chef Barry in this article.
You see in the absence of daylight when darkness falls upon us, we are sleeping with the hormone melatonin that is made in our pineal gland ,a tiny organ that is so small in the center of our brain and is the shape and size of a corn kernel.
“Even some plants can produce melatonin in small quantities like banana, tomato, spirulina and chlorella plus beets and cucumbers as well. This very important hormone and antioxidant circulates with in our body with enzymes to deactivate viruses and antigen bacteria that is foreign to our own immune system. Melatonin is most active at night when we are sleeping and is inactive during waking ours. The hormones in our body are smart in working with our 24 hour circadian rhythm cycle. “
During our sleep which is relevant to our breakfast is pointed out in the following way.
“Studies out of Japan concludes that during sleep of 7 to 8 hours the human body loses up to one quart of water just through respiration alone not counting any trip to the bathroom for urination. “
“This is a lot of water to lose in one night so in the morning we may feel hungry but in actuality our body is thirsty for water. We have been fasting and dehydrating all night through sleep and the cells and body is technically dehydrated in the morning upon wakening. “
“This is why many nutritionist and Holistic oriented Doctors are saying you must drink at least one glass of water upon rising.”
“Your digestive organs including your pancreas while you where sleeping has quietly released its own digestive enzymes to circulate inside your body to seek out and destroy viruses, cancer cells, and other microbes along side with other immune system white blood cells. Your body is using your sleep time to repair itself or you can put it another way . To recharge your batteries.”
In the morning many people misinterpret their signal for thirst as a signal for food and in doing so deprive their body of the water lost during respiration of sleeping . The word breakfast means exactly that ( Breaking your Fast) You are breaking your fast near or at lunch and not at breakfast time. So a heavy breakfast of foods will tax your digestive organs to make them work harder and it is kind of like shocking your internal system to perform so abruptly for digestion of your foods.
The coffee which is acidic with its high caffeine will dehydrate you even further more.A meal that is mixed with a lot of beverage will dilute the pancreatic digestive juices that can lead to incomplete digestion of foods and will dilute the hydrochloric acid production in your stomach that is responsible for breaking down your foods for assimilation into your small intestine. “
“This is why it is always better to eat a light breakfast with a larger beverage of fresh squeezed juice in the morning. Your biggest meal will be reserved for lunch time instead. By doing this you will speed up your metabolism to lose unwanted weight off of your body. “
“What do you eat or drink or both for a light breakfast? “
“For myself I have my first glass of water and maybe add some lemon lime juice with a bit of sole water (Pink Himalayan sea salt dissolved in filtered water) some cold pressed organic apple cidar vinegar and for sweetness may be a bit of stevia, raw honey, coconut flower sweetener powder, or unsulphured black strap molases. “Also I could add my ingredients to my fresh coconut water for a fine refreshing beverage that my filtering organs will love. “
“After that I make a fast juice in my Garden Villa Phuket Earth Kitchen located in Phuket Thailand.”
“Note that some of the organic produce is from the store or market and the rest is picked fresh from my garden.”
Why is it so important for health to juice?
The juice carries oxygen and plant enzymes directly into the body at the cellular level. The lack of fiber allows this to happen by bypassing the digestive system. Digestion does start in the mouth this is why it is important to swish the juice around first in your mouth to digest the complex carbohydrates from the juice .

Whole orange sections, some pineapple a green apple is a good option (for taste)2 garlic cloves one small red onion for immune system support. some carrot sticks for beta carotene. one red tomato for Lycopene Assortment of many different leafy greens mixed together. For a long list of minerals ,vitamins and the plants cleansing green blood chlorophyl. Chlorophyl has a similar structure in chemistry to our own blood plasma.
“I will not get into what juice machine to buy. Just having any juice machine and using it on a regular basis will make a positive health difference at the cellular level. It may take one week one month or even one year to feel the difference so just have some patience to work with Nature. “
“One to 2 glasses of fresh made real juice is what your liver and body will recognize as food and nutrition. The store bought pasteurized dead juice missing enzymes and dense nutrition will not do the same thing for your body and your blood sugar will be spiked .”
As a good digestive rule it is better to eat or drink your raw foods first as the transit time is much faster than cooked foods. If you eat cooked foods first than the longer digestive time of the food chyme in your stomach will mix in with the raw foods on top and your stomach will experience fermentation and digestive problems such as hear burn , or reflux forcing your pancreas to work even harder.
If I was to eat solid food at breakfast time and sometimes I do especially if I know that I am going to be burning a lot of calories that day with sports and exercise.
For example I may make a fruit salad, or a home made living food granola using sprouts and seeds with nuts mixed in with fresh berries and some brown rice milk or apple juice.
Or I may even have one soft boiled hen or duck egg organic and free range on a bed of leafy greens a few living sprouts some brown rice with some of my left over smoothie .
The combinations are endless.
Some more health tips from Chef Barry :Yes always support your local farmers market and they can use your business. Do not be to concerned that their product may not have a certified organic label on their product .
Just talk with them and they will share their production knowledge with you. It costs a lot of money to be organically certified and this cuts out a lot of the small family farms trying to etch they're living. In most cases their produce is organic just talk with them.
Buying Tip from Chef Barry . Just look for holes in the leafy greens. If the insects are chewing on the leaf you know it has not been sprayed. Do not eat the same greens every day or too often. All plants carry built in toxic alkaloids that are natural pest prevention chemicals built into all strong fertile organic plants . The conventional plant that is growing in chemical fertilizers will not have as much of this protection and will be weaker.
Eat a whole rainbow of foods every day with leafy greens at every siting all raw and fresh mixed in with some cooked foods using water only never oils. I will explain the cooking part and why it is healthy for you in another post .
