When making green tea, water should be heated in a kettle but not brought to boiling. It should only be heated enough so that tiny bubbles are rising from the bottom of the kettle (about 80°C). The water from the kettle should then be poured into a large clay or porcelain teapot. The cozy around it will keep it warm. Pour water out from this large teapot into the small teapot from some distance.
