Cassoulet-ish Stew with Pesto

Not a proper cassoulet, I'm sure, but good anyway: white beans, the last of the homemade seitan, a vegan Italian sausage for flavoring, and a can of whole tomatoes torn into chunks. The greenish bits are cheeseless pesto that I drizzled over the top, mainly because it was there.

i love cassoulet, though i never ate the "real" thing. i only know the vegan version. i usually do it in the oven and put some breadcrumbs on top.

btw, at the first glance i thought there were some raw meat chunks in there ;) but i guess it's the tomatoes and seitan...

Yipe! I can see what you mean, but it's definitely tomatoes and seitan. Really, honestly.

The breadcrumbs sound like a good idea. I'll try that with the leftovers tonight. Thanks!

Looks good. I made lentil soup this weekend. Cassoulet is the soup for this upcoming weekend.

I love your photo! It came up on a search for white beans with a license that allowed commercial use; I hope it is okay for me to use it (with full credit to you of course) on a recipe for my new business. It's not quite the same recipe... it's mainly beans, less brothy, but people could serve it in a brothier fashion. What would you charge someone to use one of your pictures in a handout or recipe or whatever for their small business?
