pecan tartlets
something for santa!
mini pecan tarts (adapted from a paula deen recipe)
crust:
1/2 cup butter, softened
1/2 cup sugar
1 egg
2 cups all purpose flour
cream the butter and sugar together until light and fluffy. incorporate egg, then flour.
pinch off a ball of dough and place into each mini-tart pan. form crust around sides with your fingers, the thinner the better, but be careful not to have any holes or tears. set aside.
filling:
2 tbsps butter, softened
1 1/2 c brown sugar
2 eggs
2 tsp vanilla extract
1/4 tsp salt
a LOT of chopped nuts (about 2-2 1/2 cups)
cream butter and sugar together, until light and fluffy. incorporate eggs, and vanilla and salt.
fill uncooked crusts halfway with chopped nuts. using a squeezy bottle, fill to top with the butter/sugar mix. sprinkle more nuts on top. bake in 325˚F preheated oven for 20 minutes until lightly golden.
makes 48 mini tarts.

As a kid we used to leave a can of beer, a piece of fruitcake, and a carrot. Amazingly it had vanished by the morning.

These look good, I will have to try them this week so santa will get them in time.
funny santa never ate the fruit cake we left out for him when I was a child...he needed the beer (or something stronger) to help wash it down, I think.

hi dapatches! even if santa's on a diet, you can make these later for a picnic or something. they travel well.
santa's getting picky about his fruitcakes i think. better leave a bottle of ale out.

hoolloowoolloomooloo--these are great. you can make a big batch and freeze them. they keep very well.
