Down to the head

Down to the head

At this point I had not cut the head off. I am sharpening the knives regularly to keep them razor sharp. The next step would be to cut the head off.

Cool Temps

Cool Temps

It helps to have cool temps, to cool the meat quickly, but not too quickly. The skin comes off easier if the goat is still quite warm.
