Making the umu

The umu oven is a traditional Samoan method of cooking food.

Four stems from a tree are placed in a square. River stones are placed at the bottom and made into a flat base. Wood is placed on top of the stones and this wood is lit. More wood is placed on top. More stones are placed on top of the wood.

Making the umu

The umu oven is a traditional Samoan method of cooking food. Here, in the foreground, the food can be seen ready to go into the umu, including palusami and a fish plaited with palm leaves. The umu can be seen in the background. The kitchen area is called 'umu kuka' and is a separate building to the living area.
