Irish fruit brack
Chop 2 lb mixed dried fruit. Soak it overnight with a cup of hot strong tea, 2 oz Irish whiskey, 150g brown sugar, the zest of a lemon, and half its juice. Next day, beat 4 eggs and mix them in along with 500g flour, 1 tsp baking powder, and 1 tsp ground nutmeg. Preheat the oven to 300F and brush a tall cake tin with butter. Line it with parchment paper. Spoon the batter in and bake about 2 hours or until cooked; cool somewhat before serving.
