Chocolate Bread Pudding with Berries and Cream

After the mocha panettone had proved to taste not-so-good, I decided to turn it into a chocolate bread pudding. This one worked beautifully!

      My critic:
I can't really say that I already have my own style but I use the brown-blue colour-combo a lot and shoot from that angle very often. Due to low light conditions, I bounced my flash onto milk glass (top side of pic) and probably used a white cardboard to reflect some light back (can't remember).
What I like: the parallel lines of the plate and that there is some visible texture in the cream. What I don't like: too much reflection on the sauce, it doesn't appear red anymore. Any ideas on how to prevent this? For some reason, only in this shot the bread pudding looks burnt on top although I swear it wasn't...;-)

How to avoid such hard reflections on the sauce. (1) use a semittransparent paper a hold it in between light source and dish. This will soften the light. (2) You can use a polarization filter to compensate for the reflections. Maybe you would then have to use a more leveled angle.

I also like the parallel lines of the plate. You could have emphasized this effect by arranging the angle/cropping in such a way that one line starts exactly in upper left corner and the other in lower right corner.

Maybe a mirror instead of a white card board would have reflect a bit more light back to the bread pudding and make it a bit brighter in color. And it would also have given more light to the front of the backdrop.

You have captured the texture of the cream well and the white balance is well done.

Also the more minimalistic" setting without any propping is great here. The dish ahs enough different textures.

Thanks for your comprehensive feedback, Thorsten! I agree with the lines - unfortunately, I was too rushed to do it properly (my guests were waiting). Guess I have to stick to my cardboard as I don't have a big portable mirror but maybe I'll buy one. I will definitely try the trick with the semitransparent paper. Just one question: Do you hold it with your hands or do you have some sort of device to keep it in place? When I'm shooting very quickly, I don't use a tripod so I wouldn't have another free hand for holding the paper (unless I employ one of my guests). But maybe I should either buy a filter or just start to always use a tripod...
