      Its 1 or 2 potatoes. Boiled. Mashed up. Cooled. Mixed up with a dash of vanilla and a ton of powdered sugar (as much as it takes to make it rollable) Roll flat to 1/4" thickness. Spread with peanut butter. Log roll. Slice and enjoy! Very simple and easy! Id just not use too many potatoes if I were you. I did that once and had to use... oh maybe 4 pounds of sugar! hahaha.

      YAY! Someone else has heard of potato candy! We've never rolled ours, we just form it into little balls or other shapes. We like our sugar in my family. Sometimes we add other extracts for flavors, like mint, or orange.
      Rule of thumb: 1 med russet potato = almost 2lbs sugar

      I grew up on this candy, my mom is from Ironton, Ohio and her mother had 18 children so it was a cheap way to make sweets for a bunch of kids. Never knew anyone else knew of it!! My so now 30 yrs. old asks me to make it on special occasions, messy but well worth the big smile it brings to his face:) My mom found a way to cheat she would beat egg whites till stiff and then powdered sugar, never could tell the difference:) Dreama From Montana

      Dreama- Really? Ironton, Ohio?? My grandparents are both from Ironton. I have never in my life met someone who had heard of the town let alone know anything about it! How fun!
