Su Succu
Su succu è una minestra asciutta di tagliolini, conosciuta e diffusa in molte parti della Sardegna. Lo zafferano è ciò che caratterizza il piatto e lo innalza ad alti livelli gastronomici. Rinomato e famoso è quello di Busachi (Oristano), paese in cui a su succu è anche dedicata una sagra.
Ingredienti:
* tagliolini ottenuti dalla lavorazione a mano di 500 g di semola di
grano duro impastata con un uovo, un pizzico di sale e acqua q.b.
* un chilogrammo di carne mista (agnellone o pecora, manzo e gallina)
* almeno 30 fili di zafferano polverizzato sul momento
* 300 g di formaggio pecorino fresco, acido, fermentato almeno due
giorni a temperatura ambiente
* 4 cucchiai di pecorino stagionato e parmigiano grattugiati
* alcuni cucchiai di sugo di pomodoro
* sale q.b. per il brodo
