Lemon, Dill Salmon a la Jamie

I follow Crazy Jamie on her blog. There was a time that she was posting salmon recipes every week, so I knew I could go there to find a delicious salmon recipe. I wanted something with dill, because we'd made salmon cakes recently with a dill sauce that I wanted to try again. And of course, Jamie came through with Lemon, Dill Salmon a la Jamie.

Her recipe called for freeze dried dill, but I had fresh dill on hand so I used that. Otherwise, I followed her recipe.

Saturday, we'd gone to the grocers right after breakfast, 8AM or so. They had amazing looking sweet corn on sale, 6 ears for a buck. I bought that with no use in mind, but it worked perfectly here. So super tasty!

And of course, there is the dill sauce. It is fresh, delicious, and easy to make. We had some plain yogurt and low-fat mayo in the fridge, along with green onions. The dill and lemon went as a great companion with the salmon preparation. Perfect. And super, duper easy.

Lemon, Dill Salmon a la Jamie

Ingredients:
3 servings of Salmon - 6 to 8oz portions
2 lemons
Dill (fresh or freeze dried)
Pepper (Jamie uses lemon pepper)

Method
Preheat the oven to 400F.

Place salmon on a foil lined baking sheet. Squeeze the juice from 1/2 lemon over the salmon. Season with pepper. Place a sprig of dill on each salmon portion. Slice the remaining lemon into thin slices, and place on the salmon.

Bake in the preheated oven for 10 minutes or until desired doneness.

Dill Dressing
Possibly Eating Well

Ingredients
1/4 cup reduced-fat mayonnaise
1/4 cup nonfat plain yogurt
2 scallions, thinly sliced
1 tablespoon lemon juice
1 tablespoon finely chopped fresh dill, or parsley
Freshly ground pepper, to taste

Method
See the ingredients? Mix them, and place covered in fridge until ready to use. The flavors meld together as it sits in the fridge.
