sweet crepes

Sweet cornmeal whole wheat crepes. Inside/on top: the home made jam and some chocolate I melted down and drizzled on top. like it said they were a hit!

Hoemmade jam from the wildberries I picked from the trees behind the apartments. Yum.
How?: little water, some berries, dates to sweeten on the stovetop. (I had to soften up teh dates). then blend it all together.

Cornmeal whole wheat crepes with jame and chocolate.

Why cornmeal you ask? Well, I bought a bag of it for another recipe but I only needed a tsp of it. So to make sure it didnt go to waste I found that you can indeed make crepes with it.
I found this site that tells you how to make crepes and other kind of crepes. (both sweet and savoury)

in a nutshell: 1/2 cups WW flour, 2 TBS cornmeal, 2 egg whites, one whole egg, dash of salt, 1/2 soy milk (i used vanillia), about 1/3 cup water, 1/2 T honey, almond extract cinemon etc The batter should be as thick as heavy cream. (if too thin add more flour, if too thick add more water). Add the 1/3 cup water slowly to make sure your getting the right consistency. (save the hassle in case you accidently put too much)

about 1/4 cup per crepe. Pour it in the pan, which should be held at an angle to get the crepe to flow into its shape.
