The hard-boiled, peeled and molded eggs in a cold water bath with a little food coloring. I made these with ice cream sandwich molds from Williams Sonoma (also available on Amazon.com through The Baker's Catalog). They also do quadruple duty as cookie cutters, onigiri (rice ball) molds, and egg molds!
