Rainy day cookies made with left over Blue Bottle coffee. YUM!

2 1/4 cups of unsifted flour
1 tsp baking soda
1/2 tsp salt
1 cup of powdered chocolate
1/4 cup of cold brewed coffee ( I used Blue bottle)
1 1/4 sticks of butter (softened)
1 cup of brown sugar
2 tsp Vanilla
2 eggs
2 cups of Chocolate Chips (i used ghirardelli)
1 cup chopped walnuts (optional)

Preheat oven to 375F
Stir dry ingredients first, Flour and Baking Soda, salt and powered chocolate, set aside.
Beat Butter, Sugar, vanilla and coffee until creamy.
Then gradually blend dry mixture. Stir Chocolate chips and nuts.
Drop by teaspoon onto cookie sheets .Bake for 9 to 11 minutes. Makes 3 dozen. Enjoy!
