Solar Cooked Chicken Enchilada Casserole

    Made it again... Yummy!

    The 7 frozen chicken breasts went into the cooker at 8:30 AM. It was partially cloudy but they were still fully cooked by 12:30.

    Due to the slow cooking process, the chicken shredded easily and I put the assembled casserole on to cook at 1:30. At 5:30 I brought it in and it was perfectly done.

    In the morning and late afternoon, I used my car windowshade funnel cooker. During the midday, I used the reflector from the HotPot.

    Even though I was using my large oval roaster, the panel cookers did a plenty good job of cooking the casserole. It is remarkable how much food can be cooked in the oval roasting pans.
