Confection

Confection

The most easily made fudge in the world, ever or how to cheat at fudge making:

Peanut buttercup fudge

200g peanut butter
200g 70% cocoa solids chocolate
200g icing/confectioner's sugar
2 teaspoons vanilla extract

Pop the chocolate and peanut butter into a bowl and melt over a pan of barely simmering water.

Add the vanilla and sieved sugar. Beat thoroughly until everything's combined.

Pour out onto some silicone paper and level out with a knife dipped into hot water.

After one or two minutes, it should be firm enough to cut into squares (the size of which, you may choose - I like big ones!) and then refrigerate. Once cold, the confection, which, strictly speaking, isn't fudge at all, can be broken into pieces.
