Hello, I'm La Rita I'm the Executive Pastry Chef and owner of Carolina Cakes & Confections in Wilmington, NC., and Cake Artist for Shell Island Resort in Wrightsville, NC. Ours is an upscale custom bakery and we offer both buttercream and fondant cakes, however we not not cover our cupcakes in rolled fondant. I'm happy to put decorative fondant elements on any cupcake though. I believe that cakes should be wonderful and silky and I don't mind fondant for cakes, but the gloves come off when it comes to my cupcakes. Wilmington is the best city that I have ever lived in and I have lived in many places. People here love their cake and most of my clients ask for buttercream and I am happy to serve it to them.
