About Welsh Rarebit (aka Rabbit)

More than just cheese on toast!
You can tell by its name that Welsh rarebit is a dish that was invented in Wales. This occurred several centuries ago, and the dish eventually became popular in other parts of the UK and the world. Welsh rarebit is basically toasted bread with a sharp cheddar cheese topping. The topping is usually made by melting and blending cheese with a liquid, such as ale or milk and seasonings such as pepper, mustard and Worcestershire sauce. In some recipes, eggs are also mixed in. Once the cheese mixture is spooned on the bread, Welsh rarebit is broiled to make it golden on top. Welsh rarebit can be enjoyed as a light snack or main course with the addition of a salad. If you serve Welsh rarebit topped with a poached egg, the dish is called a "Golden Buck". Welsh rarebit blended with tomato (or tomato soup) is known as "Blushing Bunny".
Welsh rarebit is also known as Welsh rabbit. Food historians have debated how the dish got the latter name. A few sources suggested Welsh rabbit was derogatory, indicating that it was a cheap substitute for a dish that did have meat, such as rabbit, in it.
