The best IMO, John Arnold is a fantastic teacher. He does about 1 podcast a week (not so many as of late, as his wife had a baby)

He mainly use photoshop, but also does bit's in Lightroom and other standalone photo enhancing apps.

There is also a group on flickr which is great for crit.

Everything I learnt about Photoshop I learnt from those podcasts.
