I think Apple is almost cultish. It's a road less traveled so it's travelers tends to band togeter. One thing they all have in common is deep pockets of cash. Apple Computers are dollar hogs.

To use a mac is to be different and a bit rebelious. Some photographers are the same way about their camera of choice, Leica, Hasselblad, Rollei even the lowly Holga. Musicians and their Guitars be it a Gibson or a Fender, drummers well. I think it has something to do with creative types and the left side of the brain.

It's a combination of design and functionality! In 1984 I stood behind the computer store guy and watched him use the Mac for about 15 minuets. I got it. It was intuitive and easy to use. To be fair it would be years before that ease of use would really be ready for prime time but the concept was gold. Two weeks after that event I bought one and never looked back. Prior to that I had an Atari.
Apple appeals to creative types and a ever widening population that appreciates ease of use without the trouble with virus and spyware issues.

No-one loves, say, Toshiba because they are so ubiquitous. For example I love instamatic cameras, partly because of their rarity today. I'm sure no-one gave them a second glance in their heyday when they were selling by the tens of millions.

And isn't Apple still an underdog at less then 5% of market share? (don't quote me on that stat btw but I thought I read it "soared" to 4.8%). Everyone loves and underdog. I wonder if things changed over night and Market Share was 76% and there was another underdog to come along would Apple lovers jump ship? Not for me to say...but I love my Apple anyway.

For an intellectual take on this, have a look at what Umbero Eco wrote in 1994 , it's amusing as well as thought provoking.
Another thing is that they last longer and hold their value - part of my job is to lease new computers for the college where I work. The lease rental on Macs is lower than PCs over 3 years because the lease companies acknowledge that 3 year old macs will have a higher resale value that their PC cousins of the same age. This is an effect rather than a cause, but it strenghtens the case for the mac.

For me it's the way the OS doesn't get in your way but just allows you to do your stuff. OS9 was good in this way compared to the flavours of Windows that were then current, but OSX has taken it to a whole new level.
Then the cool hardware. It's often cited as a flimsy reason by the grey box owners, but then they would think that wouldn't they? ;)

Macs have a longer 'usable' time than PCs. The newest version of OSX runs decently on 7 year old Macs. You can't say the same about Windows Vista. Hell, it has trouble running on some 18 month old PCs! And I'm both a PC and Mac user, as my newest Mac is my Beige G3 running 9.2.2.
And I definately have to agree with the cool hardware. When the G3 iMac came out, it was so cool that eMachines had to make a copy (the eOne, they later got sued by Apple for it).

For the usable aspects of the Mac -- I've encountered all of the above (except for resale value because I haven't sold one). The OS doesn't get in the way, with modern OS X it integrates with almost anything thrown at it, and they are usable for most tasks far longer than an equivalent Windows PC.

I love good tools. Using a Mac makes work a pleasure, just like doing up nuts and bolts with a nice 1/4 inch Snap-On ratchet is a real treat.
