The Photographers Gallery is slap bang in soho, and it's bookshop is as much of a draw as the gallery (as well as books it has a mass of holga / pinhole / toy camera stuff).
There's a small branch of Calumet on Wardour Street (there's a much bigger branch near Euston station), and a lomography store off Carnaby Street if you're into that sort of thing.
Outside of soho, but still central there's a couple of chain photography stores on New Oxford Street (Jessops and Jacobs, opposite each other) about 10 mins walk east of soho. And a bit further on in that direction, near the British Museum there's a bunch of camera shops - The Camera Cafe being the most interesting, mixing a coffee shop with second hand cameras.

street photo wise ... carnaby street is pedestrianised so makes street photography easier .. as is the area around covent garden (lots of street performers there too)
Camden town would have some interesting sights for street photography,
