I am in London from tomorrow until Wednesday night. I am looking for a market/space where I can photograph food etc.

I have but couldn't find anything on a Monday/Tuesday/Wednesday. The ones I found seemed to be Fri/Sat/Sun.

Yes, Borough market on a Fri and St would be the best.
On a weekday you are probably just stuck with general local markets I'm afraid, like Walthamstow, Brixton, Ridley Rd or Shepherds Bush. Just try the local market in the area you are staying
