A Recipe for Hot Dogs?
|
CHICAGO HOT DOGS (from davidrosengarten.com)
4 beef hot dogs, preferably Vienna-brand
4 poppy seed hot dog buns, preferably MaryAnn-brand
Prepared yellow mustard
Bright green sweet pickle relish
1 medium Spanish onion, diced
8 thin tomato slices or wedges of pickled green tomatoes
8 green pickled sport peppers
4 spears of kosher dill pickles or spears of fresh peeled cucumber
Celery salt (optional)
Steam, boil, or grill the hot dogs until they reach an internal temperature of 170 degrees F. Steam the buns. (See Note.) Place the dogs on the buns and slather them with mustard.
Top each dog with pickle relish and onion. Lay 2 slices of tomato, 2 sport peppers, and 1 pickle or cucumber spear next to the dog.
Sprinkle celery salt over all, if desired. Serve immediately, accompanied by plenty of icy cold beer or soda pop, or a pitcher of homemade lemonade.
Note: Improvise a bun steamer by using an Oriental bamboo steamer, or a lidded Dutch oven outfitted with a rack to keep the buns out of the water. Use caution when you reach for a bun: escaping steam can burn!

When I make dogs, I use the following guidelines:
* purchase either kosher dogs, or something from a repuatble butcher. Around here that means packaged kosher franks and knockwursts.
Braise them in beer. Dogs like beer.
If you want grill marks, put them on a low heat grill long enough to get some nice charcoal effect.
Cover them in fresh tomatoes, diced white onions, delicious home-made relish, and some pommery mustard.
Wash it down with beer.

Basic ingredients for Sonoran Style Hot Dogs (in addition to being common street fare in Sonora, Mexico, these babies are found all over Tucson at various carts and wagons):
● Sonoran-style bun
● Bacon-wrapped dog, preferably
grilled over mesquite
● Plain whole pinto beans
● Grilled onions
● Grilled hot yellow pepper
● Shredded cheese (optional)
● Fresh chopped onions
● Chopped tomato
● Jalapeño sauce
● Mayonnaise and mustard
Vegetarians can leave out the hot dog and put everything else on the bun for a tasty "beanie dog."

--> KBlood : for my B'day party, I tried your recipe... Well, in Paris, it's not really possible to find "hot dog buns, preferably MaryAnn-brand" for example, but, I found some "equivalents". That was great, even if you can't make real chi hot dogs on the other side of the Atlantic (maybe even on the other side of the Michigan lake !)
Thanks for all !

Have any of you guys ever had a deep fried hot dog? George Duran did it on Ham on the Street tonight (he also deep fried Oreos, mac and cheese balls, brownies, and cheesecake).

Here are some Michigan Hot Dog recipes...But remember..FLINT CONEYS are VERY different from DETROIT CONEYS....the meat sauce in Flint is drier with yellow mustard and chopped onions and Detroit is sloppy sauce with yellow mustard and chopped onions...
Original Flint, Mich. Coney Island Hot Dog Sauce
1TB butter
1TB margarine
1-1/2 lb LEAN ground beef
2md onions minced
1 clove garlic minced
3TB chile powder
1TB prepared mustard
1 (6oz) can tomato paste
1 (6oz) can water
4 / 5 cheap skinless hot dogs
salt and pepper to taste
Do NOT brown beef before using!!
Combine all except hot dogs and simmer until thick.
Grind
the hot dogs [or chop in food processor] stir in
and cook
15 min longer.
Store in frig or freeze some.
Use over GOOD casing type hot dogs with chopped
onions and mustard. The big secret in this recipe is the
ground cheap hot dogs. This is the original Flint [MI]
Coney Island sauce. Best around anywhere.
------------------------------------------------------
CAPITOL CONEY ISLAND SAUCE (Flint, Mich.)

1 1/2 pounds ground round
6 ounces tomato sauce
6 ounces water
5 Koegel Vienna hot dogs
Combine everything except hot dogs and simmer until thick. (Do not brown
ground round first.) Grind the hot dogs and add to the sauce. Stir. Simmer
