I thought I'd start this thread off with the old standby -- S'mores!!!. I hope everyone will add their own favorite campfire treats.

What you need:

A campfire
Sticks or skewers
Marshmallows
Hershey's chocolate bars (or whatever chocolate you prefer)
Graham crackers

What you do:

Skewer marshmallow and hold just above the campfire until its outer surface starts to brown, or char (if that's how you like it).

Once heated, the inside of the marshmallow becomes soft. The marshmallow is quickly pinched off its stick with the waiting graham crackers, one of which has a piece of chocolate on it (traditionally a section of a Hershey chocolate bar).

Ideally, the heat from the roasted marshmallow partially melts the chocolate into a delicious gooey mess.

I've got some great tips for foil-cooking for the main course I'll share later!

One thing our family likes to bring are those boil in a bag Indian entrees that you can get at Trader Joe's or similar places. You just boil water on the campfire or camp stove, throw in the bag and a few minutes later, you are having a wonderful Indian meal. We cook the rice separately. Quick! Hardly any clean up!

A great recipe we use is beanie weanies. We cook the weiners on a stick over the open flame we set the open can of bush's bake beans next to the fire to heat up then we slice up the weanies and dish up the beanies, mix it up yum!!

Foil meals....put an veggies and any meats with seasoning in a foil pouch (seal it up tightly) and throw it in the coals of a fire and let cook. It's moist and delicious and completely customizable.....OH, and easy clean up too.

Our first night is maybe not "camping" food, but our favorite nonetheless---I make spaghetti at home a few days before and freeze. At camp, I make noodles then fry up some garlic bread while the spaghetti reheats. It smells great and everyone loves it!

Armpit Fudge!!!

Ingredients:
1 lb. powdered sugar
1 stick (1/4 cup) butter
1 - 3 oz pkg cream cheese
1/2 tsp vanilla
1/3 cup cocoa

Place all ingredients in a one-gallon ziplock bag. CAREFULLY squeese out all of the air. Knead the ingredients with your hands until it looks like fudge. Place under arm and 'smoosh'.

The armpit is essential! The heat from your body will 'melt' the cream cheese and butter, and give the fudge a creamier texture than just hand-kneading.


This is a 'group serve' recipe. It's so easy that I've made it in the middle of our Mall -- while promoting Scouting. You would not believe the number of 'grandmothers' asking for the recipe, touting it to be one of the best fudges they've ever eaten! [Yes, even after seeing it prepared, and knowing the name of the recipe.]




There is an 'individual' recipe but I've never made it .....

1/2 c. powdered sugar
1 tbsp. butter
2 tsp. cream cheese
dash of vanilla
2 tsp. cocoa

Place all ingredients in a sandwich-sized plastic zipped bag. Squeeze out all the air. Squish and smoosh ( under the arm!) the bag until all the ingredients are well mixed with a creamy consistency. Add any favorite flavors or other stuff to the bag after mixed (raisins, M&M's, peanut butter, chopped nuts, etc.) Dip in with a spoon and enjoy!
