What about doing a mock up cover for a magazine - not my own idea and could be consider copying but did one for another group it was great fun, please feel free to check my photo stream for example.

I was in Yankee Candle today and thought that there were a ton of cool names for the smells that they have. Being in assignment mode I thought what a fun challenge. Take a picture to represent the candle name. There must be a list somewhere of all the names. Just a thought!

Here are some more ideas:
At your Feet focus on smaller aspects by excluding the horizon from your field of view by doing this you will capture elements of a landscape on a smaller scale.
Line Out - Include horizontal, vertical, diagonal, or converging lines in photo. Eg line of trees, telegraph poles etc, Anything that will lead a viewers eye through the photo

I have an idea, total darkness and only use the flash on your camera to shoot a table top subject that can be anything.
