About caviar and roe

Beluga, sevruga, osetra, paddlefish, sturgeon, salmon, trout, and shad - Petrossian, Sterling, Astara, and Malossal - Russian, Iranian, American, Black Sea,and Caspian - any way you dollop, spread, schmear, scoop or garnish it, caviar (or fish roe) is one of my favorite foods.

It doesn't have to be blinis and creme fraiche - I'll just as gladly take a filet of shad roe roasted on a cedar plank, or some bottarga shaved over risotto. Share pictures of how you've enjoyed caviar!!
