About the Beet goes on: red, gold, white, chioggia

Red beets were initially grown as food just for their leaves. The roots, which were different looking than the ones we know today, were used medicinally to treat headaches and toothaches. The Romans were the first to notice the earthy, sweet flavor of the roots and started to prepare them in dishes, which became highly valued.

Lately however, we are seeing beets of all colors and sizes on restaurant menus ... beets are not just blood red anymore but come in a variety of colors like white, gold, pink and striped.

Originally, just the greens were eaten. They are high in nutrients and very tasty steamed and lightly seasoned. Once the root was discovered as edible, its popularity soared. Beets are a popular vegetable in helping prevent heart disease as well as colon cancer: excellent reasons for adults to eat their beets, too.

The local farmers market is the best place to get the freshest beets during the summer months ...
