Most delicatessens have a sandwich menu, most of which are made to order behind the counter at the time of sale. Delicatessens often sell their meats by weight as cold cuts, and prepare party trays.
To me? A deli is a restaurant with bountiful counters overflowing with all manner of meats, chopped liver, matzo balls, rye breads of all types, pickles of all varieties ... and to top it off? Nu, a slab of cheesecake as enormous as the Matterhorn!
